Easy Marble Loaf Cake
Seriously, it doesn’t get easier than this, and chances are you already have all of the ingredients in your pantry!
Makes on 9×5 loaf
1/2 cup (1 stick) unsalted butter, room temperature, plus more for pan 1 3/4 cups cake flour (not self-rising) 2 teaspoons baking powder 1/2 teaspoon salt 1 cup sugar 3 large eggs, room temperature 1 teaspoon pure vanilla extract 2/3 cup buttermilk, room temperature 1/4 cup plus 1 tablespoon Dutch-process cocoa powder
1. Pre-heat oven to 350 degrees. Mix dry ingredients together in a bowl and sift with a whisk. Set aside.
2. Cream butter and sugar together until light and fluffy.
3. Add eggs one at a time and beat until well incorporated. Add vanilla
4. Begin adding half of the dry ingredients and then half of the buttermilk (I used whole milk and it was fine). Repeat
5. Set aside 1/3 of the batter. In a bowl place 1/4 cup of cocoa powder plus 1 tablespoon. Boil 2 tablespoons of hot water and combine with cocoa. Mix cocoa mixture and the 1/3 of the reserved batter together.
6. In pan, begin by placing three globs of the vanilla batter (one in the corner, one in the right center and one in the other corner of the pan). Place chocolate batter in the holes. Repeat once or twice depending on how much batter you use.
7. Optional* take a skewer and run it through the batter.
8. Bake at 350 for 40-50 minutes
